Peel, core, and slice the apples into 1/2-inch thick wedges or chunks. Aim for uniform pieces for even cooking.
In a large, heavy-bottomed skillet or Dutch oven, melt the unsalted butter over medium heat.
Add the sliced apples to the skillet. Stir to coat them evenly with the butter.
Sprinkle the granulated sugar, brown sugar, cinnamon, nutmeg (if using), and salt over the apples. Stir gently to combine.
Pour in the apple juice or water. Bring the mixture to a simmer.
Reduce the heat to medium-low, cover the skillet, and cook for 10-15 minutes, stirring occasionally, until the apples begin to soften but still hold their shape.
Uncover the skillet, increase the heat to medium-high, and continue to cook for another 10-15 minutes, stirring more frequently. The liquid should reduce and thicken into a syrupy glaze, and the apples should become very tender.
