Prepare the Secret Spread: In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, white vinegar, granulated sugar, paprika, salt, and pepper. Mix well and set aside.
Prep Vegetables: Shred the iceberg lettuce, slice the tomato, and finely dice the yellow onion.
Form Patties: Gently divide the ground chuck into three equal portions. Form each portion into a very thin patty, slightly wider than your hamburger bun, as they will shrink when cooked. Season generously with salt and black pepper on both sides.
Toast Buns: Heat a large non-stick skillet or griddle over medium heat. Lightly butter or oil the cut sides of the hamburger bun halves. Toast them cut-side down until golden brown, about 1-2 minutes. Remove and set aside.
Cook Onions (Optional but Recommended): In the same skillet, add a tiny bit of oil if needed. Add the finely diced yellow onion and cook over medium-low heat, stirring occasionally, until softened and lightly caramelized, about 5-7 minutes. Remove and set aside.

Build the Stack (while cooking): After flipping the first patty, immediately place a slice of American cheese on top. Repeat with the second patty, placing it next to the first, smashing, cooking, and adding cheese after flipping. Do the same for the third patty. You might need to cook them in batches if your skillet isn't large enough. The goal is to finish them all around the same time, with the cheese melted.
