Prepare the Homemade Arby's Sauce: In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, onion powder, garlic powder, paprika, and optional cayenne pepper until well combined. Set aside.
Prepare the Homemade Horsey Sauce: In another small bowl, combine the mayonnaise, prepared horseradish, white sugar, white vinegar, and salt. Stir until smooth. Set aside.
Warm the roast beef: In a large skillet or saucepan over medium-low heat, combine the beef broth, onion powder, garlic powder, and black pepper. Bring to a gentle simmer.
Add the sliced roast beef to the simmering broth, using tongs to gently separate the slices. Allow the beef to warm through for 2-3 minutes, just until hot but not overcooked. Do not boil vigorously; we want to rehydrate and warm, not cook further.
While the beef warms, lightly toast the sesame seed buns. You can do this in a dry skillet, toaster, or under the broiler for about 1 minute until golden.
Assemble the sandwiches: Place a generous amount of warm roast beef on the bottom half of each toasted bun. Drizzle with Homemade Arby's Sauce and/or spread with Homemade Horsey Sauce, according to preference. Top with the other half of the bun.
