Recreate the iconic simplicity and deliciousness of an In-N-Out Burger hamburger right in your own kitchen. This recipe captures the essence of the classic fast-food favorite with accessible ingredients.
Prepare the Special Spread: In a small bowl, whisk together the mayonnaise, ketchup, sweet pickle relish, white vinegar, granulated sugar, and onion powder until well combined. Set aside.
Prepare the vegetables: Wash and dry the lettuce. Slice the tomato and onion. For a true In-N-Out experience, you can dice a portion of the onion very finely for the 'grilled onion' effect if you choose to grill some later.
Form the patties: Divide the ground beef into 4 equal portions. Gently form each portion into a loose ball. Do not overwork the meat.
Cook the patties: Heat a large cast-iron skillet or griddle over medium-high heat until very hot. Add 1 tablespoon of vegetable oil. Place the beef balls on the hot surface and immediately smash each ball down with a sturdy spatula (using parchment paper on top can prevent sticking) into a thin, flat patty, about 1/4 to 1/2 inch thick and slightly wider than your bun. Season generously with salt and pepper.
Cook the patties for 2-3 minutes per side, or until a deep brown crust forms. Assemble the hamburgers: On the bottom bun, spread a generous amount of the Special Spread. Layer with lettuce, tomato, and sliced (or grilled) onion. Place a cooked hamburger patty on top. Add another dollop of Special Spread to the top bun, then place it on top of the patty.
