Place the peeled and quartered potatoes in a large pot. Cover with cold water by about an inch and add 1 teaspoon of salt to the water. Bring to a boil over high heat.
Once boiling, reduce heat to medium-low and simmer until the potatoes are very tender when pierced with a fork, about 15-20 minutes. Do not undercook.
Carefully drain the potatoes completely in a colander. Return the hot, drained potatoes to the empty pot.
