These warm, savory biscuits are a home-cook replication of Red Lobster's famous Cheddar Bay Biscuits, packed with cheesy, garlicky goodness.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and 1/4 tsp garlic powder.
Add the very cold butter cubes to the dry ingredients. Using a pastry blender, two knives, or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Stir in the shredded cheddar cheese.
Gradually add the cold buttermilk, stirring with a fork until just combined. Be careful not to overmix; the dough should be shaggy and moist, but not wet. If too dry, add buttermilk 1 tbsp at a time.
Using a large spoon or an ice cream scoop, drop 12 equal portions of dough onto the prepared baking sheet, leaving some space between each biscuit.
Bake for 13-15 minutes, or until the tops are golden brown and the biscuits are cooked through.
While the biscuits are baking, prepare the garlic butter topping: In a small bowl, melt the 1/4 cup butter. Stir in the minced garlic, dried parsley flakes, and 1/4 tsp salt.
As soon as the biscuits come out of the oven, immediately brush the tops generously with the garlic butter mixture.
Serve warm and enjoy your homemade Cheesy Garlic Bay Biscuits!
