In a medium bowl, whisk together the olive oil, soy sauce, apple cider vinegar, brown sugar, garlic powder, onion powder, smoked paprika, black pepper, dried thyme (if using), and cayenne pepper (if using) until well combined.
Add the chicken tenders to the bowl with the marinade, ensuring all pieces are thoroughly coated. You can also place the chicken and marinade in a large zip-top bag.
Cover the bowl or seal the bag and refrigerate for at least 2 hours, or preferably 4 hours. Do not marinate for more than 8 hours, as the acid can break down the chicken too much.
