**Prepare Yogurt Mixture:** In a medium bowl, combine the full-fat plain Greek yogurt, roasted cumin powder, kala namak (black salt), red chili powder (if using), grated fresh ginger, minced green chili (if using), finely chopped fresh cilantro, sugar or honey, and a pinch of regular salt. Mix all ingredients thoroughly until evenly distributed. Taste the mixture and adjust seasonings as needed; it should be a harmonious balance of tangy, savory, subtly sweet, and mildly spiced.
**Bloom Gelatin:** In a small microwave-safe bowl, sprinkle the unflavored gelatin powder evenly over 2 tablespoons of cold water. Let it sit undisturbed for 5 minutes, allowing the gelatin granules to absorb the water and bloom (thicken).
