**1. Marinate Chicken:** In a medium bowl, combine the cut chicken pieces with 2 tbsp low-sodium soy sauce, 1 tbsp rice wine vinegar, 1 tbsp cornstarch, and 1 tsp sesame oil. Mix well and let marinate for at least 15 minutes while you prepare other ingredients (or up to 30 minutes in the refrigerator).
**2. Prepare Sauce:** In a small bowl, whisk together all sauce ingredients: 1/4 cup low-sodium soy sauce, hoisin sauce, 1 tbsp rice wine vinegar, brown sugar, chili garlic sauce, 1 tsp sesame oil, 1 tsp cornstarch, and chicken broth/water. Set aside.
