Cook penne pasta according to package directions. Drain and set aside.
Season chicken slices with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, sauté garlic for 30 seconds until fragrant.
Add sun-dried tomatoes and cook for 2 minutes.
Pour in heavy cream and chicken broth. Bring to a gentle simmer.
Stir in Parmesan cheese until melted and sauce is smooth.
