Inspired by the endlessly satisfying breadsticks from Olive Garden, this recipe brings that warm, garlicky, and soft experience right to your home kitchen.
In a large bowl, combine warm water and 1 tablespoon of granulated sugar. Sprinkle the active dry yeast over the water. Let sit for 5-10 minutes until foamy, indicating the yeast is active.
Stir in the remaining 1 tablespoon of sugar, 1 teaspoon of salt, and olive oil into the yeast mixture.
Gradually add the all-purpose flour, one cup at a time, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface.
Knead the dough for 7-10 minutes, or until it is smooth and elastic. If using a stand mixer, use the dough hook for 5-7 minutes.
Lightly grease a clean large bowl with a little olive oil. Place the dough in the bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
Punch down the risen dough to release air. Turn it out onto a lightly floured surface. Roll the dough into a large rectangle, approximately 1/2 inch thick.
Using a pizza cutter or sharp knife, cut the dough into 16-18 strips, about 1 inch wide and 6-7 inches long. You can gently stretch each strip slightly if needed.

Bake the breadsticks for 10-14 minutes, or until they are light golden brown on top and bottom. Do not overbake; they should remain soft.
While the breadsticks are baking, prepare the topping: In a small bowl, combine the melted butter, garlic powder, and 1/2 teaspoon of salt. Stir well. Add chopped parsley if using.
