**Prepare the chilled oil for pearls:** Pour the neutral oil into a tall glass or jar and place it in the freezer for at least 1 hour to ensure it's very cold. The colder the oil, the better the pearls will form.
**Prepare the white balsamic mixture:** In a small saucepan, combine the white balsamic vinegar, granulated sugar, and agar-agar powder. Whisk well to dissolve the agar-agar as much as possible.
**Heat the balsamic mixture:** Place the saucepan over medium heat and bring the mixture to a rolling boil, whisking constantly. Continue to boil for 1-2 minutes to fully activate the agar-agar. Remove from heat and let it cool for about 5 minutes, allowing it to remain liquid but no longer scorching hot.
**Form the white balsamic pearls:** Remove the chilled oil from the freezer. Using a clean dropper or a syringe, carefully draw up some of the slightly cooled balsamic mixture. Hold the dropper/syringe about 4-6 inches above the oil and slowly drip individual drops into the cold oil. The drops will immediately solidify into small spheres as they fall through the cold oil. Continue until all the balsamic mixture is used.
**Rinse the pearls:** Carefully strain the oil into a fine-mesh sieve set over a bowl. The pearls will remain in the sieve. Immediately rinse the pearls gently under cold running water to remove any excess oil. Transfer the pearls to a small bowl with a tiny splash of water or vinegar to prevent sticking, and set aside.
**Prepare the oysters:** If your oysters are not yet shucked, carefully shuck them, discarding the top shell and ensuring no grit remains. Loosen the oyster from the bottom shell muscle. Arrange the shucked oysters on a bed of crushed ice or rock salt on a serving platter.
**Assemble and serve:** Gently place about 1/2 teaspoon of the white balsamic pearls on top of each oyster. Sprinkle with a tiny pinch of sea salt and a generous amount of finely minced fresh chives. Serve immediately and enjoy the bursting flavor of the pearls with the fresh oysters.
